Dine- Fusion Restaurant

My sister and I had heard from a few friends that we should try Fusion Restaurant located in Paradise Mall in Simpson Bay. I googled the restaurant as I always do before eating somewhere I haven’t been to yet. The website, equipped with their menu, explained that the owners were born in Suriname where they were exposed to a spectrum of herbs, spices and ingredients while growing up. Their restaurant, Fusion, is the result of that lifelong ambition.

 The menu looked amazing and by the time it was time for dinner, my stomach was grumbling. We sat down and were quickly helped by one of the staff. We each ordered a glass of wine, which was to our delight amply poured into large glasses. We decided to share a few dishes so that we could taste more of what the menu had to offer.

 

We ordered Tuna Tartar (diced sashimi grade ahi tuna, fresh ginger and cilantro with a mango avocado guacamole, served with balsamic ponzu, red chili aioli and crisp fried prawn crackers), a set of Bacon Wrapped Scallops (pan fried bay scallops, wrapped in applewood smoked bacon served over a ginger infused balsamic caramel sauce) and as last the Red Curry Coconut Snapper (described as a “pan fried snapper fillet, simmered in red curry and lemon grass infused coconut sauce, topped with crispy fried rice noodles”).

 

The descriptions made my mouth water. The menu also included a list of salads, soups and meat-dishes and a tofu option for vegetarians. After we ordered, the staff brought us a small shot of tasty miso-soup and very fresh bread and garlic-herb aioli. While we waited for our first course, we took some time to take in the surroundings.

 

The restaurant had seating inside and out. Normally, I would choose to sit outside but the view was unfortunately that of the parking lot and casino, which did not add to the ambience. However, inside the restaurant was very tastefully decorated. I was also happy that the temperature was perfectly honed, as establishments on the island often turn up the air-conditioning way too high.

 

Not too long after the Tuna Tartar was served. Honestly, the first bite was an amazing explosion of flavours. The avocado, mango and very fresh tuna melted in my mouth. It was perfect. Right as we finished, the staff brought he Bacon Wrapped Scallops. I could not note anything wrong with the taste but I preferred the Tuna Tartar, most likely because it was a very heavy appetizer. As a meat and seafood lover with an endless pit in his stomach, my boyfriend would’ve loved it.

 

The Red Curry Snapper was delightful, especially the Red Curry and Lemon Grass Infused Coconut Sauce that it was simmered in. Though the dessert menu which included Banana Spring Rolls, Chocolate Lava Cake and a Raspberry Tartalette sounded delish, we were so stuffed, we weren’t sure we could get up.

 

It was a nice evening. I’d recommend any foodie to eat at Fusion at least once. Though I don’t think the ambience would be perfect for a romantic evening out, it is great for a quiet night with family or friends.
